Quick and Easy Banana Bread Muffin Recipe

My banana relationship has been a rocky one. I'm serious! I know it's weird that I am thinking of it as a relationship, but I have a relationship with food...seriously! Does no one else? Smh. I can't be the only one. Anyway, when I was younger I loved them, couldn't get enough. Somewhere growing up, I lost my taste for them and quit them all together. It wasn't until I went on a 7day honeymoon at a wonderful bed and breakfast in beautiful San Diego that brought my love for them back! Ugh, after eating out twice a day for 7days and the only home cooked meal you get it is the fresh breakfast the owner gives you, and she serves the hated banana, you eat them (actually you gobble them) and discover once again how delicious they are. In the quest of eating healthy, and trying to instill this healthiness on to Jayla, I came across this nifty mini banana bread muffin recipe searching through the internet.

I loved this banana bread muffin recipe because it was so quick and easy. This is by far one of the simplest recipes I have ever made!  You can quickly mix up a batch and clean up is virtually non existent! I discovered just how easy it was when I finished mixing everything and discovered that they were meant to be mini (the recipe below is doubled). I was scrambling through the kitchen, digging and digging, until I thought "girl you can just make another batch". I spooned the first recipe into the regular muffin pan, quickly mixed another batch, and added the new batch evenly on top of the old.



Voule! Into the oven it went. Jayla, her father, and uncle (LOL), and I loved these muffins!! Super moist, delicious, and full of flavor.

Prep Time: 10min Cook time: 20min Total Time: 30min

2 ripe bananas

4tbsp butter, softened

2 eggs

2tbsp honey

2tbsp brown sugar

1tsp vanilla

2tsp baking powder

1/2tsp salt

1/2tsp cinnamon

2 cups old fashioned oats

*half recipe for mini muffins





1. Preheat oven to 375. In a large mixing bowl, combine all ingredients and mix well

2. Spoon into greased muffin tin pans. Bake for 20min or until golden brown.



This banana bread muffin recipe is great for the toddler (one year and up due to honey) that loves to eat on the run. It can be a quick breakfast or a nice snack. The best part is they are healthy and super easy to make! That way, if your toddler decides to not eat them there's no sweat off your brow. Because we all know that toddlers are very picky eaters and sometimes need to try foods multiple times before they decide they like it. (BTW these only took Jayla twice to try :))
